Fresh Mint Iced Coffee

Fresh Mint iced coffee is a refreshing and delicious drink that can be made in just minutes with the help of an ice-cream maker.

This recipe for fresh mint iced coffee was created by my friend, Linda from The Kitchen Goddess Cooks! She has been making this delicious beverage for years and it’s always one of her most popular recipes.

I love how easy it is to make and how tasty it tastes. It’s perfect on a hot summer day or as a refreshing treat during the winter months.

1 cup brewed espresso (or strong coffee)

2 cups water

3/4 cup sugar

1 1/2 teaspoons pure vanilla extract

1 tablespoon freshly squeezed lemon juice

1 teaspoon finely chopped fresh mint leaves

Ice cream maker


In a large bowl, combine all ingredients except the ice cream. Stir well until sugar dissolves. Pour into an ice-cream maker and churn according to manufacturer’s instructions. Transfer mixture to a container and place in freezer for at least 2 hours before serving. Serve over crushed ice. Garnish with additional mint leaves if desired.
